Peppermint Mocha AIP Brownies
AIP brownies are legal, delicious and a perfect way to indulge while sticking to the autoimmune protocol. These brownies are made without grains, dairy, sugar, eggs or nuts, but they are still moist and chocolatey. You can make them with any type of sugar-free sweetener you like, and they are also gluten-free and vegan.
AIP Brownies Recipe
AIP stands for Autoimmune protocol and is a Paleo diet, but with some additional guidelines to help those with gluten intolerance, celiac disease, or other autoimmune disorders reduce their symptoms.
These brownies are an ideal treat for those on the AIP diet because they are nut-free, grain-free, and low in sugar. These brownies are made with tigernut and arrowroot for a rich flavor, with a bit of avocado oil for added moistness.
I specifically create this recipe to keep it cassava flour and nut flour free. We used Beth’s blends which used tiger nut flour and arrowroot flour.
Brownie Ingredients:
2/3 cup Sip Herbals Peppermint Mocha Herbal “Coffee.”
2 cups applesauce
1/2 cup avocado oil
2/3 cup coconut sugar
2 cups Beth’s Blends Nut and Cassava Free Flour blend
2 tablespoons Gelatin
1/4 cup hot water
Brownie Frosting:
1 cup of sustainably harvested Palm Shortening
1/2 cup of maple syrup
1 teaspoon Peppermint extract
Green plant-based good coloring
Instructions
Preheat your oven to 350 degrees and then grease and line an 8×8 baking pan. Set aside.
Take the Peppermint Mocha “coffee” and grind it in a coffee grinder until you have a fine powder. Please note that you can skip this step; however, if you do, you will experience bits of herbs in your coffee.
Now combine the finely ground “coffee” with the apple sauce, avocado oil, coconut sugar, and flour. Mix until you have a batter.
To make the gelatin egg, in a separate bowl, add the gelatin and hot water. Whisk for 30 seconds until you have a frothy mixture, and then pour over the brownie batter and mix until well combined.
Pour the batter into the greased and lined 8×8 square pan and place it in the oven. Let it bake for 1 hour.
Remove from the oven and let cool for 40 minutes before icing.
To make the frosting, place all the ingredients in a bowl and with a hand-mixer and blend for 3 seconds.
Frost the cooled brownies, and then slice and enjoy!
