AIP White Sweet Potato Hummus Recipe: Healthy, Easy & Delicious

White Sweet Potato Hummus is a dip that is made out of white sweet potatoes. It has the same consistency and taste as regular hummus but it has less calories than its red counterpart. This recipe will show you how to make this delicious dip in no time!
This white humus recipe only has two ingredients: white sweet potatoes and tahini paste. You can find tahini paste at your local grocery store or at Middle Eastern stores. The process of making this dish is pretty simple so you donβt need to worry about anything!
AIP White Sweet Potato Hummus Recipe
3 cups peeled and cubed white sweet potato, about 2 large potatoes
5 cloves garlic
3 tablespoons lemon juice, more to taste
ΒΌ cup olive oil, more for thinning if needed
1 teaspoon Sip Herbals Original Coffee Substitute
Salt, to taste
1. Fill a large pot halfway with water and bring to a boil. Place the cubed sweet potatoes in the water and boil for 5-8 minutes depending on the size of your potatoes. Boil until the potatoes are easily pierced with a fork and break apart. Reserve the cooking liquid.
2. To a food processor add sweet potatoes, garlic cloves, ΒΌ cup cooking liquid, lemon juice, and olive oil and blend until completely smooth and pureed. Adding additional olive oil and cooking liquid as needed.
3. Taste and add salt to your preferred taste and additional lemon juice. 4. Add to a bowl and top with a drizzle of olive oil, chopped parsley and flaked salt. 5. Store in the fridge covered and let it come to room temperature before serving as it will slightly solidify in the fridge from the olive oil. Enjoy with all of your favorite AIP snacks!
